Tzatziki
Greek
Tzatziki is a creamy Greek yogurt-based dip or sauce that balances cooling cucumber and bright herbs with garlic and a touch of acidity. Its silky texture and refreshing flavor make it essential for mezze platters, a perfect accompaniment to grilled meats and vegetables, and an ideal condiment for gyros and pita. The dish relies on proper drainage of cucumber to prevent wateriness, creating a thick, luxurious consistency that clings beautifully to food.
Ingredients
- 1 large English Cucumber
- 1.5 cups Greek Yogurt -- substitute: Plain Yogurt, Sour Cream
- 2 cloves Garlic
- 2 tbsp Dill -- substitute: Parsley
- 1 Lemon -- substitute: Lime
- 1 tsp White Wine Vinegar -- substitute: Rice Vinegar, Sherry Vinegar
- 0.5 tsp Salt
Steps
Peel the cucumber, cut it in half lengthwise, and scoop out the seeds with a spoon. Grate the cucumber on the large holes of a box grater into a fine-mesh sieve or cheesecloth.
Let the grated cucumber drain for 10 minutes, then gather the cheesecloth and squeeze firmly to extract as much liquid as possible, pressing until no more water runs out.
Mince the garlic cloves finely and place them in a medium bowl with the Greek yogurt and salt.
Stir the yogurt, garlic, and salt together until fully combined, then fold in the drained cucumber and finely chopped fresh dill.
Add the lemon juice and white-wine vinegar, stirring gently to incorporate.
Taste and adjust seasoning with additional salt, lemon juice, or vinegar as needed. Cover and refrigerate for at least 30 minutes before serving.
Plating ideas
- Transfer to a shallow bowl and create a shallow well in the center with the back of a spoon. Drizzle with extra-virgin olive oil and finish with a pinch of smoked paprika and a few fresh dill fronds. — This is the traditional presentation for mezze service, inviting diners to dip.
- Serve alongside warm pita bread, sliced tomatoes, red onion, and Kalamata olives for a complete mezze platter. — Tzatziki acts as both dip and sauce in this spread.
- Dollop generously onto grilled lamb chops or chicken souvlaki right before serving, allowing it to melt slightly from the residual heat. — The cool sauce contrasts beautifully with hot grilled proteins.
- Spread inside warm pita pockets with grilled vegetables, sliced cucumber, and fresh herbs for a light sandwich. — Use tzatziki as the binding element rather than mayonnaise.
