Loaded baked potato
American
A loaded baked potato is a classic American comfort food featuring a crispy-skinned russet potato topped with melted cheddar cheese, crispy bacon, sour cream, and fresh chives. The contrast between the fluffy interior and crispy skin, combined with cool sour cream and savory toppings, makes this a satisfying side dish or light meal. Popularized in American diners and steakhouses, it's beloved for its simplicity and the way each component plays off the others.
Ingredients
- 4 large Potato
- 2 tbsp Vegetable Oil
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 8 oz Bacon -- substitute: Pancetta
- 1.5 cups Cheddar Cheese -- substitute: Gouda Cheese, Mozzarella Cheese
- 1 cup Sour Cream -- substitute: Crème Fraîche, Greek Yogurt
- 3 tbsp Chives
Steps
Preheat the oven to 400°F.
Scrub the potatoes under cold running water to remove any dirt, then pat dry with a paper towel.
Prick each potato several times with a fork to allow steam to escape during baking.
Rub the potatoes lightly with vegetable oil and sprinkle generously with salt and black pepper on all sides.
Place the potatoes directly on the oven rack (with a baking sheet on the rack below to catch any drips) and bake until the skin is crispy and a fork easily pierces the flesh.
While the potatoes bake, cut the bacon into 1-inch pieces and cook in a skillet over medium-high heat, stirring occasionally, until crispy.
Transfer the cooked bacon to a paper towel-lined plate to drain and cool slightly.
Chop the fresh chives into 1/4-inch pieces.
Once the potatoes are done, remove them from the oven and let cool for 1-2 minutes until they can be handled.
Cut each potato in half lengthwise and use a spoon to gently fluff the interior, being careful not to tear the skin.
Divide the shredded cheddar cheese evenly among the potato halves, placing it on top of the warm flesh so it begins to melt.
Top each potato half with a generous dollop of sour cream, then sprinkle with the crispy bacon pieces and chopped chives.
Additions
- Onion — Add sliced onion to the bacon fat before the potato goes in -- it softens and sweetens alongside the potato, the classic Bratkartoffeln combination.
- Cheddar Cheese — Melt in shredded cheddar once the potato is cooked, for a loaded-baked-potato or twice-baked-potato direction.
- Chives — Snipped over the top at the end for a sharp, fresh contrast to the richness of the bacon and potato.
Plating ideas
- Arrange the potato halves cut-side up on a warm plate, allowing the melted cheese to pool slightly in the center, then top with sour cream and garnish with bacon and chives for a classic presentation. — The visual contrast of white sour cream against orange cheese and dark bacon is part of the dish's appeal.
- Serve the loaded potato alongside a simple green salad dressed with vinaigrette to balance the richness. — A light accompaniment cuts through the heaviness and makes this feel like a complete meal.
- For a steakhouse-style presentation, place the potato halves on a small board or slate and let diners add their own sour cream and toppings from small bowls on the side. — This interactive approach lets people customize their potato to preference and adds a casual, inviting feel.
