Elote

Elote is a beloved Mexican street food—fresh corn on the cob coated with a creamy, tangy, savory sauce and finished with crumbly cheese and chili powder. The combination of charred corn, cool crema, sharp cotija, and bright lime creates a perfect balance of textures and flavors that's both simple and deeply satisfying. It's quick to make at home and transforms a humble ingredient into something irresistible.

Insert a corn holder or skewer into each end of the corn for easy handling.
Brush the crema mixture generously all over each ear of corn, coating evenly.
Crumble the queso fresco (or cotija) cheese over the corn, pressing gently so it adheres to the crema.
Sprinkle the chili powder and fresh cilantro over the top, then squeeze fresh lime juice over each ear.
