Biryani
Indian
Biryani is a layered rice-and-meat dish built by par-cooking spiced chicken and partially-cooked rice separately, then steaming them together so the rice finishes cooking in the chicken's fragrant juices. Whole spices -- cardamom, cinnamon, saffron -- perfume the rice without overwhelming it, while deeply caramelized onions tie the layers together. Getting the layering and final steam right matters more than any single ingredient -- it's what separates a true biryani from simply spiced rice with chicken stirred in.
Ingredients
- 2 lbs, bone-in Chicken Thigh -- substitute: Whole Chicken
- 2 cups, long-grain Rice
- 2 large, thinly sliced Onion -- substitute: Shallot
- 4 cloves, minced Garlic
- 1 tbsp, grated Fresh Ginger
- 1 cup Plain Yogurt -- substitute: Greek Yogurt, Sour Cream
- 6 pods Cardamom -- substitute: Nutmeg
- 1 stick's worth, or 1 tsp ground Ground Cinnamon
- 1 tsp Cumin
- 1 tsp Ground Turmeric
- a pinch, soaked in 2 tbsp warm milk Saffron
Steps
Marinate the chicken thighs in yogurt, ginger, garlic, turmeric, and half the whole spices.
Soak the rice in water.
Fry the sliced onions in oil, setting aside about half for garnish.
In the same pot, cook the marinated chicken until browned and mostly cooked through.
Parboil the soaked rice in salted water with the remaining whole spices.
Drain the rice and layer it over the chicken, scattering saffron-soaked milk and the reserved fried onions between layers.
Cover tightly and cook on very low heat to finish steaming everything together.
Remove from the heat and let it rest, covered, before gently fluffing and serving.
Plating ideas
- Serve straight from the pot at the table — Biryani is traditionally presented layered and unmixed, so guests see the contrast between golden rice, dark spiced chicken, and crisp onions before it's tossed together.
- Top with extra fried onions and fresh mint — A final scattering just before serving adds crunch and color that would steam-soften if added any earlier.
- Pair with a cooling yogurt raita on the side — A plain yogurt side dish balances the warmth of the whole spices without diluting the biryani itself.
